MIXED SALAD WITH HEARTS OF PALM AND GOAT CHEESE

Nothing beats a fresh mixed salad with lemon, garlic and extra virgin olive oil for me.  Crunchy, fresh, tasty, nutritious and so full of flavor.  Oh, and yes, you read that right.  I add at least a clove of garlic in pretty much everything.  Especially salads.  As garlic sits and marinates with juices from all the vegetables, lemon and olive oil, it gives this "je ne sais quoi" flavor to the salad that you can't really quite catch with your tongue (but you will get hooked on it) and it's really fantastic and refreshing.  It is great on it's own or can be served as a side dish for fish or meat.

Ingredients
  

FOR THE SALAD

  • 2 cup spinach chopped
  • 2 cup cherry tomatoes halved
  • 4 cucumbers small, sliced
  • 1/2 red onion small, chopped
  • 3 pieces hearts of palm sliced or chopped
  • 1/4 cup goat cheese raw, organic
  • 2 TSP parsley chopped

FOR THE DRESSING

  • 1 TSP lemon juice
  • 2 TSP olive oil extra virgin
  • 1/2 tsp oregano dry
  • salt, pepper to taste
  • 1 clove garlic minced

Instructions
 

FOR THE DRESSING

  • In a small bowl, combine all the ingredients and mix well to combine.

FOR THE SALAD

  • In a large bowl, combine spinach, tomatoes, cucumbers, onion, hearts of palm and goat cheese and mix.  Add dressing and toss to combine.
  • Sprinkle parsley over salad and serve.
