
BROCCOLI BACON OMELETTE
What is the number one thing in your refrigerator that you can not live without? For me, it's eggs. And it's not only because they are so versatile, easy to prepare and delicious but also because eggs are a great source of essential minerals and nutrients. I only buy eggs that came from organic fed pasture raised hens from a farm. The color, texture and flavor are surpassing regular store bought eggs. Eggs are a great source of cholesterol that plays an important role in our bodies. Rich in vitamins D, A, E, K2 and B complex (biotin, thiamin, B12, B6); minerals- calcium, zinc and phosphorus, anti-inflammatory omega-3 fatty acids and antioxidants, eggs from hens raised on bugs, grass and sunshine are also superior nutritionally.

Ingredients
- 2 TBS onion chopped
- 1/2 cup turkey bacon chopped
- 1 cup broccoli chopped
- 4 eggs
- 1/2 TBS ghee for frying
Instructions
- Place a frying pan over medium-high heat and melt ghee.
- Add chopped onion and cook until tender.
- Add chopped bacon and broccoli and cook until heated through, about 2 minutes.
- Whisk eggs, salt and pepper in a mixing bowl.
- Add eggs to a frying pan with bacon and broccoli.
- Cook covered for about 2-3 minutes or until eggs are set and cooked through.
- Enjoy!
