  • 2 large red onions
  • 1 cup white vinegar
  • 1 cup water
  • 1 TBSP honey
  • 1 tsp sea salt
  • 1/2 tsp whole black peppercorn
  • 2 cloves garlic optional
  • 1 bay leaf optional

Instructions
 

  • In a saucepan, combine white vinegar, water, salt, and optional spices. Place the saucepan over medium heat and stir until the salt have completely dissolved. Remove the pickling liquid from the heat and let it cool for approximately 10 minutes. This will prevent the heat from wilting the onions. Add honey and gently whisk to dissolve.
  • While the pickling liquid is cooling, peel and slice the onions in uniformed semicircles to ensure even pickling. Pack the sliced red onions into clean, sterilized jars. You can use mason jars or any other airtight containers that are suitable for pickling.
  • Carefully pour the cooled pickling liquid over the onions, ensuring they are completely submerged. Leave a small amount of headspace at the top of the jars to allow for expansion during pickling. Use a spoon or a chopstick to remove any air bubbles.
