We don't usually eat bread, but if I am to give it to my kids it's usually a sourdough bread (fermentation process removes some of the gluten from bread) and I serve it with loads of nutrients, fiber and healthy fats to substitute for nutrient empty flour.
- 4 slices sourdough bread toasted
- 2 avocados
- 2 cloves garlic finely chopped
- 1 TBSP lemon juice
- 1 TBSP cilantro chopped
- 1 can of sardines
- 2 TBSP olive oil extra virgin
- 1/2 tspn salt
- 1/2 tspn pepper
Scoop out avocados and mash with fork.
Add garlic, lemon juice, cilantro, salt and pepper.
Mix well and spread evenly over toasted bread slices.
Add sardines and sprinkle with olive oil.
Serve with cucumbers and tomatoes slices.
Mmmm, so simple and delicious!
