Pork cutlets are scrumptious and incredibly easy to make. They are packed with flavor, very juicy, tender and only take a few minutes of prep time, making this a perfect recipe for busy weekdays or lazy relaxing weekends! These pork cutlets are so cheesy, flavorful and juicy, this will quickly become your favorite go-to recipe in your weekly menu.
And the best part? You can make it either into a full meal recipe or even turn it into a sandwich by putting pork cutlet between pieces of sourdough bread or lettuce leaves and adding a fried egg and fresh greens on top. If you don't eat pork, then simply substitute it with chicken instead.
It pairs well with GRILLED VEGETABLES SALAD, GOAT CHEESE BEETS AND ARUGULA SALAD, SPINACH MASHED POTATOES and even cooked buckwheat or quinoa.

Ingredients
  

  • 8 pork cutlets
  • 1 TBSP avocado oil
  • 1 onion sliced rings
  • 2 tomatoes sliced rings
  • 4 cloves garlic minced
  • 1/2 cup avocado mayonnaise
  • 1 tsp mustard
  • 2 TBSP parsley chopped
  • salt to taste
  • pepper to taste
  • 8 slices havarti cheese

Instructions
 

  • Preheat the oven to 400 degrees F.
  • Grease the baking tray with oil and place pork cutlets in the tray.
  • Combine salt, pepper, minced garlic, mustard, mayonnaise and chopped parsley. Spread a tablespoon of mayonnaise on top of each cutlet. Add tomato and onion slices.
  • Bake in the oven for 15-20 minutes.
  • Right before your cutlets are done, add a slice of cheese on top of each cutlet and bake until the cheese has melted.
