BACON WRAPPED SCALLOPS

Following a carnivore diet, finding appetizers or main dishes that are both soft and crispy but aren't steak can be a challenge. Enter BACON WRAPPED SCALLOPS! This dish brings together the rich, smoky flavor of bacon with the delicate, ocean-fresh taste of scallops, achieving a perfect blend of savory, salty, crispy, and tender in every bite.
Thick-cut bacon works best in this recipe, as it crisps up without drying out. Be sure to thoroughly pat the scallops dry before wrapping them in bacon to ensure the bacon adheres well and crisps up nicely.
Not only is this dish easy to prepare, but it’s also packed with essential nutrients to support a meat-based, zero- or low-carb diet. Whether served as a tasty appetizer or a main dish, these bacon-wrapped scallops are sure to impress.
Both scallops and bacon are excellent sources of protein, containing essential amino acids your body needs for muscle growth, immune function, and overall health. Scallops are particularly lean, while bacon provides additional fat, creating a balanced macronutrient profile for those on a carnivore diet.
Scallops are naturally rich in omega-3 fatty acids, which support heart health, reduce inflammation, and promote brain function. They are a great source of minerals like magnesium, phosphorus, and potassium, which play essential roles in bone health, muscle function, and cellular hydration. They’re also high in zinc and selenium, both powerful antioxidants that help protect your body from oxidative stress.
Both scallops and bacon are rich in B vitamins, especially B12 and niacin, which support energy production, red blood cell formation, and metabolism. For anyone on a low-carb or carnivore diet, these vitamins are essential for maintaining energy levels.
BACON WRAPPED SCALLOPS are simple to prepare yet look impressive on the table, making them ideal for a festive appetizer or a main course. So, if you’re looking for a quick, delicious, and nutritious dish that’s also carnivore-friendly, these scallops are a must-try. Enjoy this delectable, low-carb treat, knowing you’re fueling your body with high-quality proteins and fats!

Equipment

  • toothpicks to secure bacon on to the scallops

Ingredients

  • 20 large scallops For smaller scallops, either double the scallop quantity or reduce the total number of bacon strips by half.
  • 10 bacon strips cut in half

Instructions

  • Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • Pat the scallops dry with a paper towel. This will help the bacon stick to the scallops and crisp up. Wrap 1/2 slice of bacon around each scallop and secure with a toothpick. If your bacon is thick-cut, you may need to partially cook it in the oven for 4-5 minutes before wrapping the scallops to ensure it cooks through.
  • Place the wrapped scallops on the prepared baking sheet. Bake in the preheated oven for 14-16 minutes, flipping halfway through, until the bacon is crispy and the scallops are opaque with an internal temperature of about 120-130°F.
    Remove toothpicks before serving.
