Ingredients

  • 20 large scallops For smaller scallops, either double the scallop quantity or reduce the total number of bacon strips by half.
  • 10 bacon strips cut in half

Instructions

  • Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • Pat the scallops dry with a paper towel. This will help the bacon stick to the scallops and crisp up. Wrap 1/2 slice of bacon around each scallop and secure with a toothpick. If your bacon is thick-cut, you may need to partially cook it in the oven for 4-5 minutes before wrapping the scallops to ensure it cooks through.
  • Place the wrapped scallops on the prepared baking sheet. Bake in the preheated oven for 14-16 minutes, flipping halfway through, until the bacon is crispy and the scallops are opaque with an internal temperature of about 120-130°F.
    Remove toothpicks before serving.
