Tomato spinach basil shrimp in a garlic butter sauce

TOMATO SPINACH BASIL SHRIMP IN A GARLIC BUTTER SAUCE
Ingredients
- 1 lbs raw shrimp peeled, deveined and patted dry
- 3 TBSP butter or ghee
- 1 large onion diced
- 1/2 cup red bell pepper diced
- 3 large tomatoes diced
- 4 cups fresh spinach leaves chopped
- 1/4 cup fresh basil leaves chopped
- 3 cloves garlic minced
- 1 lemon, juiced and zested
- 1/8 tsp crushed red pepper
- 1/3 cup shredded Parmesan cheese to serve
- salt to taste
- pepper to taste
- keto pasta, or vegetables of your choice to serve optional
Instructions
- Melt the butter in a large skillet over medium heat. Add the chopped onion and sauté for 2-3 minutes until fragrant. Then add diced red bell pepper and cook until soft, about 3-5 minutes.

- Add the diced tomatoes to the skillet and sauté for 3-4 minutes until they start to soften and release their juices. Season with salt, pepper, chili pepper flakes, lemon juice and zest and minced garlic.

- Add the chopped spinach and basil to the skillet, stir and cook until it wilts, about 2-3 minutes.

- Add the shrimp to the skillet and sauté for 4-5 minutes until they are cooked through and pink. Sprinkle shredded parmesan cheese on top.

- Serve hot over keto pasta or kelps noodles with lemon wedges on the side.

Thanks, what a great question! Spinach, tomato and basil are my favorites for this recipe but I always like to experiment and add more depending on what I have in my fridge at the time. Adding fresh arugula to the plate right before serving (so it maintains freshness and crispiness) is another yummy option. Including staples like peas or shredded carrots will work as well. Adding small cubes of zucchini to the spinach 2-3 minutes before taking the dish off the stove (to prevent them from overcooking and becoming mushy) is another wonderful addition to this dish. Enjoy!
