This smoky, zesty Chipotle Beef Salad is everything loved about a burrito bowl—just lighter, brighter, low-carb, and packed with fresh veggies. It is perfect for meal prep, quick weeknight dinners, or a satisfying post-workout meal.
This bowl layers juicy marinated beef with crisp greens, creamy avocado, fiber-rich beans, and a tangy chipotle-lime dressing. The flavors are bold and restaurant-style, but the ingredients are simple and easy to find. It is naturally gluten-free and can be adapted for dairy-free or high- or low-carb eating.
Beef: Flank, skirt, or sirloin works beautifully for this recipe because these cuts marinate well and stay tender when cooked quickly. You can also use shredded or diced chuck roast or slow-cooked roast beef meat.
Greens and veggies: Romaine or mixed greens create a crunchy base, while bell peppers, onions, and tomatoes bring color and extra nutrients.
I am not using rice or beans for a low-carb version, but you can add them to your salad if desired.
Chipotle-lime dressing: Olive oil, lime juice, cumin, paprika, oregano, red pepper flakes, if using, and garlic tie everything together with smoky heat.
For a lighter, low-carb version, skip the rice and load up on extra greens and veggies.
Add yogurt or sour cream for a creamier, heartier version.
The components store well separately: keep the cooked beef and sautéed veggies in containers in the fridge for up to 3–4 days, then assemble fresh bowls as needed.

Ingredients
  

  • 1 lb beef meat shredded
  • 4 cups lettuce shredded
  • 1 red or yellow pepper
  • 1 medium tomato diced
  • ¼ red onion diced
  • 1 avocado diced
  • handful cilantro minced
  • 1 clove garlic grated
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp oregano
  • 1 tsp salt
  • ½ tsp ground black pepper
  • ¼ tsp red pepper flakes optional
  • 1 lime juiced
  • 2 TBSP olive oil
  • ½ cup feta cheese crumbled
  • cup shredded sharp or semi-sharp cheese

Instructions
 

  • Gather all ingredients.
  • Combine lettuce, tomatoes, red onion, red pepper, avocado, cilantro, and garlic in a large salad bowl.
  • Season with cumin, paprika, oregano, salt, and black pepper, red pepper flakes (if using), and drizzle with lime juice and olive oil.
  • Add shredded or diced beef meat and top with crumbled feta and sharp or semi-sharp cheeses.
  • Enjoy!
