CHICKEN BREAST WITH LEEKS

This recipe is always a weekday night winner with my family. What can be easier to make, more satisfying, fulfilling and delicious than fried chicken with leeks? You can serve it with mashed potatoes, buckwheat, rice, fresh or steamed vegetables or a side of sauteed greens- pretty much anything your heart desires.
Leeks is a crown jewelry of an onion family. Usually the white and light green parts of the vegetable are cooked but the darker green parts can be used when making soup stocks or dishes that require longer cooking time to allow this harder part of the vegetable more time to soften.
Leeks almost always have some extra dirt or sand hiding between the layers. But once you learn how to prepare them it will not longer be a scary job suitable for seasoned chefs only.
1. Wash the visible dirt and sand off the leeks.
2. Cut off the root.
3. Cut off the desired amount of leeks you want to use and cut the leeks lengthwise.
4. Chop leeks to desired thickness.
5. Fill the large bowl with cold water and add the leeks.
6. Now give your leeks a cold bath. Wash them using your hands to remove any dirt clinging to them.
7. Put chopped leeks in a colander and rinse well under cold running water.
8. Shake the colander several times to remove water and dry leeks well.
Leeks taste like something of an onion. scallion, chives and garlic mix- the best of all the worlds in this one vegetable! Sauteed leeks hold their shape better than onions and have a very mild, slightly sweet onion taste. When you let them cook on a low medium heat they become tender, caramelized, sweet and absolutely delicious.
Leeks are rich in vitamins A, C, K, folate and manganese.

Equipment

Ingredients

  • 1 tbsp ghee
  • 6 leeks thinly sliced
  • 1.5 lb chicken breast cubed
  • 2 cloves garlic minced
  • 1 tsp salt to taste
  • 1/2 tsp pepper to taste
  • 1 tbsp parsley chopped
  • 1 tbsp dill chopped

Instructions

  • Heat ghee over medium high heat.
  • Add sliced leeks to the pan and lower the heat to medium low.
  • Sautee leeks stirring occasionally for about 10-15 min, until tender and caramelized.
  • Add minced garlic and fry for another minute.
  • Cut chicken breast into cubes and season with salt and pepper.
  • Add chicken cubes to the pan and raise heat to medium high,
  • Fry chicken, stirring occasionally, until easily pierced with a fork and the juices run clear,
  • Sprinkle with parsley and dill.
  • Serve immediately.
