Ingredients

  • 8 mozzarella sticks cut into halves
  • 1 cup pork rinds
  • ¼ cup parmesan cheese finely grated
  • 1 cup buttermilk
  • 1 egg whisked
  • 1/4 tsp salt

OPTIONAL: FOR KETO EATERS

  • ½ tsp garlic powder
  • 1 tsp italian herbs

Instructions

  • Mix finely grated parmesan cheese, pork rind and salt in a shallow dish. Mix in herbs and garlic powder, if desired.
  • Whisk an egg yolk and combine it with buttermilk in another shallow dish.
  • Dip each mozzarella stick in the whisked egg, ensuring it's fully coated. Roll it in the pork rind mixture, pressing gently to adhere. Repeat for a thicker coating if preferred.
  • Place the coated cheese sticks on a silicone mat or parchment paper-lined tray and freeze for at least 30 minutes. This prevents them from melting too quickly when baking.
  • Preheat the oven to 425 F.
  • Remove mozzarella sticks from the freezer and place on a separate baking sheet. Bake frozen for 5-8 minutes, until the cheese begins to soften. Too much heat can cause the cheese to leak, so monitor them closely.
    Take out of the oven and immediately place on a serving tray.
  • Enjoy immediately for the perfect cheesy pull! Freeze extras for a quick snack later and just bake them straight from frozen!
