This is a great homemade herbs mixture that will make your most simple dishes taste like a Micheline star restaurant masterpiece.Use it in sauces, marinades, soups, pies. Sprinkle on salads and greens. Add to your fish, poultry, meat and vegetable dishes. If you do not have all the ingredients on hand or if you prefer a milder and more delicate taste of this spice mixture you can try a shorter version- combine in equal parts: 1 TBSP of dried coriander seeds, 1 TBSP of dried basil, 1 TBSP of dried marjoram, 1 TBSP of dried dill, pinch of dried red chili pepper and 1/16 teaspoon of dried ground saffron and turmeric. You can also substitute saffron and turmeric for the same amount of safflower seeds.You can keep it in the fridge until you are ready to use it. You can even freeze it by mixing with olive oil and pouring mixture into ice cube trays! Simply add the cubes to the recipes based on the spice mix portions you froze- if you froze one teaspoon of this mixture with one tablespoon of olive oil and the recipe calls for two teaspoons of khmeli-suneli mix then simply add two cubes. Instructions
In a spice grinder or small food processor, add fenugreek seeds and bay leaves and blend until powdered.
Add the rest of the spices to a spice grinder and pulse until combined.
