EGG WAFFLES

Waffles don't have to be packed with nuts, seeds, grains, or sweet carbs. You can have a healthy, light, quick waffle any time of the day, satisfy your hunger, and know that you treated your body right with the most bioavailable nutrients, vitamins, and minerals for humans.
If you are trying to remove plant oxalates, lectins, and phytates from your diet and your body, I have a recipe that is perfect for that. You can also take it a step further and remove black pepper from this recipe. I left it in mine because, hey, I like living dangerously.
I like to make a whole bunch of these waffles and keep them in the fridge for a quick and easy breakfast on the go or a midday snack for kids. Spread some butter on it, and there you have your perfect protein and fat combo.

Pre-heat the waffle iron, add a butter piece to each square, and let the butter melt completely.
Cut sugar-free bacon or ham into small, bite-sized pieces. If you like your bacon crispy, then fry it separately prior to adding it to a bowl with the rest of the ingredients.
Add all the ingredients to the bowl and combine, slightly whisking the eggs while you are mixing.
Laddle about ½ cup of the egg mixture into each section of the waffle iron and spread it out. The grids should be completely covered with eggs but not overflowing. Close the waffle maker and hold it together firmly for 10 seconds. Release and cook for about 1 minute, or until the egg is completely cooked through. Carefully open the waffle maker, making sure the egg is not stuck to the top of the cover. If it is, close the waffle maker and cook for another 10 seconds. Open slightly and carefully unstick the waffle with a fork.
Use a fork to lift the edge of the waffle, and then lift it out. You can carefully roll it to take it out and unroll it onto the plate.
